MAGGI AND OTHER BOUILLON CUBES.

Use of Maggi and other Bouillon cubes as a flavor enhancer is widespread across Africa for many different African recipes. These cubes, which have no nutritive value have grossly taken the place of many fermented seeds and products that once added much variety, flavor, and nutritive value to our African foods. Fermentation of  seeds like ogiri (sesame seeds) and iru (african locust bean), though still done, may soon be a lost art.
Using fermented seeds as food flavoring in soups and other recipes has many more benefits than use of your typical bouillon cube. Research shows that fermentation of these seeds increases the protein content,  mineral and vitamin content, and increases the digestibility of the carbohydrates found in the seeds. Thus, addition of these fermented products into our food, would increase the nutritive value of our foods. In contrast, Maggi cubes and similar products,  add no nutritive value to our foods, but also actually decreased the healthfulness of our foods.
Three primary ingredients in these products are: iodized salt, monosodium glutamate (MSG), and hydrogenated oil(trans fat). All three of these ingredients have been found to negatively effect health.
  • Iodized Salt: It’s made up of 99% sodium chloride and the other 1% is an anti-caking agent which is designed to make it more free-flowing and keep it from absorbing moisture. The problem is that anti-caking agents are basically made of compounds such as ferrocyanide, talc, and silica aluminate, which are harmful to your body. Aluminium intake leads to neurological disorders and as it builds up inside the body, it causes further degeneration over time.The sodium chloride in table salt is concentrated, denatured and toxic to your body. Excessive sodium, of course, is linked to high blood pressure, which can lead to heart disease, stroke, heart failure, and kidney disease. So excess use of these products may be a contributing factor to high blood pressure occurance in particular populations.

“DON’T ADD SALT TO ALREADY COOKED FOOD”

  • Hydrogenated oils (trans fat) consumption has a definite link to increased chances of developing coronary artery disease, which is a hardening and narrowing of arteries that supply blood to the heart. This is due to trans fats’ ability to increase LDL (bad) cholesterol and decrease HDL (good) cholesterol in our blood stream.

  • MSG (Monosodium Glutamate):
    It contains harmful E number and flavor enhancer added to processed meat,soups/stews. It is “generally recognized as safe” by the FDA in the U.S.The FDA, hide MSG, under certain names.

Maggi Seasoning contains the caramel coloring that’s used in Coca-Cola, Pepsi, and other foods and is contaminated with two cancer-causing chemicals.

The artificial brown colouring that gives the cubes its colour is made by reacting sugar with ammonia and sulphites under high pressure and temperatures. This reaction creates carcinogens which if consumed in high amounts may be raising your risk of cancer.

The use of Maggi seasoning is exposing people to an avoidable and unnecessary cancer risk from an ingredient that is being added purely for aesthetic purposes.

  • Maize Starch,
  • Vegetable Fat (Palm),
  • Hydrolysed Soya Beans,

  • Colour (Ammonia Caramel),
  • Onion,
  • Ferric Pyrophosphate,
  • Emulsifier (Soya Lecithin),
  • Spice Extracts (White Pepper, Chill, Clove),
  • Flavouring,
  • Yeast Extract
  • Sodium caseinate,
  • Ajino motor,
  • Autolyzed yeast,
  • Hydrolyzed soy protein,
  • Dry milk powder,
  • Glutamic acid,
  • Whey protein, etc.

The fermented seeds of African Locust Bean are used as a flavor enhancer in soups and other dishes. It faces competition with low cost bouillon cubes containing MSG as a flavor enhancer. However, these cubes cannot compete with the nutritional value or complexity of flavor that Dawadawa offers.
